Polly’s Easy Veggie Lo Mein

Leftover Vegetarian Stir Fry Vegetable’s or you can simply make your own with in season vegetables in your area.

Cook some Chinese wheat noodles about 6 or 7 minutes in a large 4 quart wok with plenty of water until tender.

Once the noodles are cooked, drain them and add them to a large 4 quart platter or bowl, then add in your 3 cups of stir fry….whatever you like…about 50/50 ratio of noodles to veggie mix.

Drizzle with a little sesame oil and low sodium teriyaki sauce or hoisin. You can add some roasted garlic cloves, if you have them on hand, which I usually do because they infuse so much flavor to dishes and sauces. 

Enjoy.

Top with shredded fried wontons.

I found mine in the salad section where they sell dressing and croutons.

Note: the noodles are cooked for this dish where in the international section of the store labeled “Chinese Chow Mein” noodles. Mine were made in Los Angeles, California, where they make lots of international ingredients. These are not fried Chow Mein noodles that you buy in a can! These are wheat noodles that are very long and cooked just like pasta from Italy, but they’re not. If for some reason they don’t carry the long thin chow mein and your area, you can find them at Cost Plus World Market Kama which is one of my most favorite stores in the world!
